The beef is BMS No. 9, the top marbling grade in Korea's beef grading system, vacuum-aged four weeks in a dedicated refrigerator. The Eight Courses, in Order

The course opens warm, turns cold, then moves through beef in three registers before closing with rice and dessert. Nothing on it is filler.

1. Welcoming tea. Jeju-grown young green tea roasted with cacao nibs and black sugar — a smooth finish with gentle sweetness, served warm to settle the palate before the food begins.

2. Jamón granita. Aged jamón with ricotta, blackberry granita and fresh greens. Cured pork for umami, ricotta for weight, frozen blackberry for acid and cold.

3. Korean-style beef tartare. Finely seasoned, balanced across savoury, sweet and umami — the seasoning quiet enough that the beef's own fat and iron stay in front.

4. The main dish. A chef's selection of premium cuts, tenderloin or sirloin among them, chosen on the day. More on this below; it is the part of the course that changes.

A B KUT lunch runs eighty minutes from the welcoming tea to the last spoon of panna cotta. At the counter in the evening the courses run about two hours; in a private room, about three. The difference is not rushed service — it is eight dishes instead of thirteen or fifteen, paced without gaps.
