KUT SEOUL has five private rooms alongside an eight-seat chef's counter: one room for 2–3 guests, two for 2–4, one for 3–6, and one for 6–12. The restaurant seats forty in total, so on a busy evening the rooms are most of the restaurant.

The Signature Course, in Order

The meal opens quietly: a welcoming tea, then jamón granita with wild ginseng, and two preparations of beef tartare with Avruga. A citrus garden resets the palate before the beef proper begins.

The middle of the course is the grill.
